Dutch vegetable soup withTaugé mung bean sprouts

Ingredients for 4 servings>
  • 1 onion
  • 1 leek
  • 1 package mung bean sprouts (200 g)
  • 1 package button mushrooms
  • 1 l vegetable broth
  • a bit of oil / butter

Heat the butter/oil and sauté the onion, leek and mushrooms. Add the broth and let simmer for 2 minutes. Add the mung bean sprouts and bring to a boil. As soon as the soup begins to boil, remove from heat. The soup will be ready to enjoy. Thanks to the short cooking time, the mung bean sprouts will have a nice bite and enrich the dish with their freshness.
